Chipotle Chicken Meal-Prep
Meal prep always starts with a flavorful core protein. If you’re struggling with complicated meal prep, give this recipe a try. Then throw it on a salad, on top of some rice, or cauliflower rice, or even in a tortilla.
This meal prep protein recipe one of my favorites not just because it’s so fast and easy, but also because it’s delicious and super versatile.
When I’m planning my menu for the week I pick one protein and then figure out at least two meals that I can make with it. This makes weekly meal planning more manageable – it allows me to cook up one protein that I can use for a few different meals.
For example, this chicken can go right on top of a salad bowl, or you can make tacos or burritos, or add it to the enchilada pasta bake for a different spin. Even with similar flavors during the week, this is a far cry from your basic, boring, dry, baked chicken.
A protein gets my ultimate thumbs-up comes when I can eat it right out of the fridge, and it still tastes really good. This chipotle chicken has a sold thumbs-up! I actually ate this chicken right out of the fridge with a handful of raw broccoli the other day.

Ingredients
Taco Seasoning
You can use any brand of taco seasoning mix that you have on hand.
I highly recommend making a batch of our House Brand Taco Seasoning.
Taco Seasoning Ingredients:
- Chili Powder
- Cumin
- Dried Oregano
- Onion Granules
- Ground Coriander
- Paprika
- Cayenne Pepper
- Salt
- Black Pepper
Boneless Chicken Breasts
This recipe calls for chicken breasts but you can also use chicken thighs.
Step by Step Instructions
- Dice: Dice the chicken into chunks.
- Sprinkle: Sprinkle the chicken with taco seasoning and toss to coat.
- Bake: Bake at 425℉ for 15 to 20 minutes. Alternatively, you can grill or pan cook this chicken.
Taco Seasoning Is The Key
After you make a batch of this fantastic taco seasoning spice blend for the chipotle chicken, you can store it in an airtight container and use it anytime you need some quick and spicy flavor.
I’ve used this spice blend with chicken and ground beef for the fastest tacos you’ve ever had. Five minutes in a pan, add some greens and avocado, and dinner is served.
Another one of my favorite ways to use this spice blend is to make fajitas. Use a few teaspoons while sautéing your meat and veggies to add a ton of flavor. Add a squeeze of lime and some tortillas, and you have an awesome dinner in 10 minutes!

Chipotle Chicken
Ingredients
- 3 lbs Chicken Breasts, or Thighs, boneless, skinless
- 2 tbsp Taco Seasoning, Foodology Geek Brand
- 2 tsp Coconut Oil, or Avocado Oil
- 1 tsp Kosher Salt (affiliate link)
- ½ tsp Pepper
Instructions
- Dice chicken and season with taco seasoning and salt and pepper. Toss to coat. Set aside.
- Heat oil in skillet on medium-high heat.
- Add chicken to pan. Cook until browned and done inside. Approximately 5-8 minutes.
