  3. Add the spices and the tomato paste. Stir. Cook for a few minutes.
  4. Add the tomatoes and the beef broth.

Directions for Slow Cooker Chili

  1. In a large skillet, cook the ground beef (or other meat) over medium heat until browned. Drain off excess fat.
  2. Add the chopped onion and minced garlic to the skillet and cook for a few minutes until the onion becomes translucent.
  3. Transfer the cooked meat, onion, and garlic mixture to the slow cooker.
  4. Add the diced tomatoes, tomato sauce, kidney beans, black beans, and diced green chilies (if using) to the slow cooker. Stir everything together.
  5. Sprinkle the chili powder, cumin powder, paprika, oregano, salt, and pepper over the mixture in the slow cooker. Stir again to ensure the spices are evenly distributed.
  6. Cover the slow cooker with the lid and cook on low heat for 6-8 hours or on high heat for 3-4 hours. The longer cooking time will allow the flavors to meld together.
  7. Taste the chili and adjust the seasonings if needed.
  8. Serve the chili hot with your desired toppings, such as shredded cheese, sour cream, or chopped green onions.

Directions for Instant Pot Chili

  1. Set your Instant Pot to the sauté function and allow it to heat up.
  2. Add the ground beef (or other meat) to the Instant Pot and cook until browned, breaking it up into small pieces. Drain off excess fat.
  3. Add the chopped onion and minced garlic to the Instant Pot and sauté for a few minutes until the onion becomes translucent.
  4. Turn off the sauté function.
  5. Add the diced tomatoes, tomato sauce, kidney beans, black beans, and diced green chilies (if using) to the Instant Pot. Stir everything together.
  6. Sprinkle the chili powder, cumin powder, paprika, oregano, salt, and pepper over the mixture in the Instant Pot. Stir again to ensure the spices are evenly distributed.
  7. Close the lid of the Instant Pot and make sure the pressure release valve is set to the sealing position.
  8. Select the “Manual” or “Pressure Cook” setting on the Instant Pot and set the cooking time to 15 minutes on high pressure.
  9. Once the cooking time is complete, allow for a natural pressure release for about 10-15 minutes. Then, carefully perform a quick pressure release by turning the pressure release valve to the venting position.
  10. Open the Instant Pot lid and give the chili a stir. Taste and adjust the seasonings if needed.
  11. Serve the chili hot with your desired toppings, such as shredded cheese, sour cream, or chopped green onions.

FAQs & Expert Tips

What meat is best for chili?

The best meat for chili, hands down, is beef chuck. Ground chuck is best for a fast and easy chili. Cubed chuck roast is amazing; but, it will date a longer time to cook.

What beans are keto approved?

Because beans have a high carbohydrate count, they are not keto approved. Two exceptions are black soy beans and green mung beans. See the carb count of beans.

What To Serve With Chili

A cool crisp salad is always the perfect thing to serve with a bowl of chili. Here are a few of my favorite salads and salad dressing recipes.

You can also serve a low-carb corn muffin. I’m testing a low-carb Jalepeño and Cheddar muffin. This keto cornbread will be perfect for serving with chili and other low-carb soups.
