This crunch and refreshing cucumber salad recipe is a little bit spicy, a little bit sweet, and a whole lot of delicious.
When I was pregnant with my daughter I craved cucumbers all the time. Weird? This cucumber salad was nearly a daily occurrence. It wasn’t uncommon for me to buy 6 or 8 cucumbers on a grocery shopping trip. My mouth waters thinking about the salty, gingery, spicy dressing.
This ginger-soy dressing is light and refreshing. It is great on cucumbers; but also on a lettuce salad. Keep this dressing in your arsenal of quick and easy dressing recipes.
Asian Cucumber Salad
Cucumbers with a light ginger-soy dressing. So refreshing. Great with spicy food.
- 3 english cucumbers thinly sliced
- ½ red onion thinly sliced
Spicy Sesame Ginger Dressing
- ¼ cup tamari or soy sauce
- ¼ cup rice wine vinegar
- 1 tbsp mirin
- 2 tsp coconut oil
- 1 tsp garlic crushed
- 1 tsp fresh ginger grated
- 1 tsp crushed red pepper
- ½ bunch cilantro finely chopped
- 2 tbsp sesame seeds
Using a food processor for this makes it really easy to slide cucumbers fast.
You want about 4-5 cups of cucumbers.
You can peel them or leave the peel on.
Slice red onions really thin.
Mix all ingredients in a bowl.
Mix and pour over cucumbers.
