Banana Ice Cream, often called nice cream is my favorite way to make vegan ice cream. It’s so easy to make and you can make a million different flavors. The frozen dessert base is made with just 2 ingredients, and it’s the perfect way to use up bananas that are getting too ripe.

This Strawberry Mojito nice cream is inspired by the mojito and has a refreshing, bright strawberry flavor with a hint of lime and fresh mint. to give this frozen bowl of deliciousness its mojito flair.

What is nice cream?

If you haven’t heard of nice cream before, you might be wondering what it is. Nice cream is homemade vegan ice cream made with frozen bananas and non-dairy milk.    

Its a delicious non-dairy alternative to ice cream if you can’t eat dairy or just don’t want to.

You can make this healthy frozen dessert with almost any fruit you like. You can even add cocoa if you’re in the mood for healthy chocolate ice cream.

Expert Tips

Nice cream is made with frozen bananas, coconut cream (or other non-dairy milk), and fresh frozen fruit. The frozen fruit is blitzed in a blender. What you end up with is a healthy, creamy, dairy-free ice cream.

What you’ll need to make nice cream

The basic ingredients for this recipe is frozen fruit and full-fat coconut cream.

  • Frozen bananas: 3 to 4 frozen bananas. Extra-ripe bananas work best for making nice cream. The banana adds sweetness and creaminess to this frozen dessert.
  • Coconut cream: 1/2 cup of full-fat coconut milk. You can also use other non-dairy milk; cashew milk is a great choice and is exceptionally creamy.
  • Fruit. 2 cups of strawberries, frozen. You can also use other varieties of fruit.
  • Lime juice. The juice of one lime.

How to make dairy-free ice cream

  1. Add the frozen strawberries, frozen bananas, lime juice, and coconut cream to the high-speed blender.
  2. Blend until smooth. The mixture will be the consistency of soft serve. You can eat it now or freeze more for a firmer consistency.
  3. Optional: Add the mixture to an ice cream maker and churn until the mixture is a firmer consistency.
  4. Place the frozen nice cream in a container and store it in the freezer.
  5. Remove from the freeze 10 minutes before serving to soften the ice cream.

This vegan ice cream can be served straight from the blender if you want a soft serve consistency or it can be frozen in an ice cream maker or in a container in the freezer if you want a harder freeze.

Different Fruit

This vegan ice cream can also be made with different fruits. These are my three favorites. Just freeze the fruit and then blitz it in a blender to make a creamy, fruity frozen treat.

  • Mango
  • Peach
  • Raspberry

Chocolate vegan ice cream

If you’re craving chocolate ice cream, you can easily make this into a chocolate nice cream recipe.

  • Chocolate. Add 1/4 cup of cocoa powder to make a nice chocolate cream. Alternatively, add a 1/4 cup to 1/2 cup of chocolate chips.
  • Chocolate, peanut butter. Add the chocolate as stated above and a few tablespoons of peanut butter.
  • Rocky Road. Make the chocolate ice cream and fold in chopped almonds and mini marshmallows.

Storing + Freezing Tips

How to freeze

This ice cream is delicious right out of the blender. However, If you want this dairy-free ice cream to have a firmer texture, freeze in an ice cream maker or simple scoop it in to a bread pan, wrap tightly in plastic wrap and freeze for several hours before serving.

How to store

Store any leftover nice cream in an airtight container in the freezer. Remove it from the freezer for 5 to 10 minutes before serving to allow the cream to soften a bit.

Strawberry Nice Cream

Strawberry nice cream is a refreshing vegan ice cream full of fresh strawberry flavor. This frozen dessert is super easy to make. Only 4 ingredients are needed to make this healthy frozen treat.

Ingredients
 

Nice Cream Base

  • 3 to 4 extra ripe bananas, frozen
  • 4 ounces Coconut Cream, or full fat canned coconut milk
  • 2 cups strawberries, frozen
  • 1 Lime, juiced

Toppings

  • 1 cup strawberries, diced
  • 1 Lime, cut into wedges for squeezing
  • 2 tbsp Fresh Mint, finely diced or julienned

Instructions
 

  • Add the frozen fruit, coconut cream, and lime juice to a high spped blender. Process until smooth.
  • Add the fruit mixture to the ice cream maker and churn until the mixture is the consistency of soft serve ice cream.
  • Serve immedietly or freeze for later.
  • If you do freeze the mixture, bring it our 10 minutes before serving to soften before serving.

Non-dairy milk: I use Kara’s Coconut Cream. But you can also use canned coconut milk. You can substitute cashew milk or another variety of non-dairy milk for the coconut cream.
