Line a large baking sheet with parchment paper or a silpat.
Combine the dry ingredients in a large bowl.
Warm the coconut oil, add the honey and the vanilla to the warm oil.
Pour the liquid ingredients into the dry mixture, add any spices and salt and stir with a spatula. Make sure every oat and nut is completely coated.
Spread the mixture onto the baking sheet and spread it out so that is evenly distributed.
Bake for 10 minutes.
Toss the granola and then reduce the temperature to 275℉
Bake an additional 15-20 minutes until golden brown.
RECIPE TIPS
You can bake this mixture into pretty much any loosely structured shape...or no shape at all. If you want to make granola, simply spread the mixture in a thin layer on a parchment-lined rimmed baking sheet. Cook until golden brown. Crack it into pieces when cool.

Granola Cookies
Add whipped egg whites to the mixture- 2-3 whipped egg whites help to bind the granola together.
Use a cookie scoop to scoop out cookie-sized portions of granola.
