Recipe VariationsNon-dairy milk: I use Kara's Coconut Cream. But you can also use canned coconut milk. You can substitute cashew milk or another variety of non-dairy milk for the coconut cream. Different Fruit: This vegan ice cream can also be made with different fruits. These are my 3 favorites. Just freeze the fruit and then blitz it in a blender to make a creamy, fruity frozen treat.
Chocolate varieties of vegan ice cream: If you're craving chocolate ice cream, you can easily make this into a chocolate nice cream recipe.
Chocolate. Add a ¼ cup of cocoa powder to make chocolate nice cream. Alternatively, you can add in a ¼ cup to ½ cup of chocolate chips.
Chocolate, peanut butter. Add the chocolate as stated above and a few tablespoons of peanut butter.
Rocky Road. Make the chocolate nice cream and fold in chopped almonds and mini marshmallows.
Storing + Freezing Tips
How to freeze: This ice cream is delicious right out of the blender. However, If you want this dairy-free ice cream to have a firmer texture, freeze in an ice cream maker or simply scoop it into a bread pan, wrap tightly in plastic wrap and freeze for several hours before serving.
How to store: Store any leftover nice cream in an air-tight container in the freezer. Bring out of the freezer 5 to 10 minutes before serving to allow the nice cream to soften up a bit.
How to serve dairy-free ice cream
Serve immediately – Nice cream will have a pretty soft consistency right out of the blender.
Freeze for later – For a firmer texture freeze for at least a few hours. If frozen overnight the nice cream will be too hard to scoop right out of the freezer. Let the nice cream sit out for 5-10 minutes before scooping.
