BOIL PASTA AND PREP MEAT
Cook pasta according to directions. Brown the meat with the onions and taco seasoning. Combine in a bowl with beans, corn and half the cheese.
Add Rotel tomatoes to the bottom of dish. Add enchilada sauce to the pasta, then add to the baking dish. Top with remaining cheese.
Bake until cheese is melted; 15-20 minutes.
Top with sliced green onions and fresh cilantro and other favorite toppings.
