Sauté onions and garlic, add the chopped shrimp, the spices, and the diced chilis. Add ½ cup of green enchilada sauce, sour cream + creme fraiche.
assemble the enchiladas
Place one-quarter cup of filling and a few tablespoons of shredded cheese on each tortilla before rolling.
Bake at 400 for 15-20 minutes.
You can top them with a dollop of sour cream, fresh cilantro, and green onions.
