Getting a healthy meal on the table every night can be a daunting task. Face it, you are way too busy.
This constant busy-ness is what prompted my love of meal prep – even in college I was a meal prepper. I worked nearly full-time and went to school more than full-time as well. I spent a lot of time commuting and studying, there was just no way to survive without having leftovers to pack.
Even back when I was cooking just for myself, I always cooked my proteins with versatility in mind. I still to this day think about proteins as the cornerstone of my meal. Once I settle on chicken or fish, or whatever sounds great, I decide what I'm going to make.
